Anyone running 18x8 ET50 front wheels on a late offset 944 (1989) ? I’m guessing tire size would be 225-40-18.

Mine are 8.5jx18 e42 with 40-235 up front. I'm not sure if that helps.

I have an 89 and bought some used 3 piece wheels that are listed as 18" X 8" with 52ET and I have 225/40-18 on mine with no issues.

Seems a lot of cars are running 50 ish front offset on 8” wheels, looking at my factory wheels that are +65 offset it doesn’t seem to be much room to the inner fenders and there only 7” wide

Yeah, 50 offset works fine with 8" wheels. Your stock +65 gives little space, but 225/40-18 should fit without rubbing. Just watch the clearance.
