I’m sure you guys will know this but I can’t figure out what’s the purpose of the fitting on the thermostat housing?

It's nonsensical. The turbo cars have an aux electric water pump to cool the turbocharger. So, on the turbo cars, that neck is open inside and flows coolant to the pump via a hose. On N/A cars, that white neck is nothing but a block-off plate that is solid inside. The only thing I can figure is that Porsche didn't want to create a separate molding for a proper block-off, so instead just produced that neck using the molds for the turbo neck, but left the center solid/blocked off.
If you have access to a cnc router, I posted a CAD file a while back to create your own flat block off plate...
